Mexican Style Corn
Homegrown corn… is there anything better? Yes, yes, there is homegrown corn combined with @season.andko ‘s Taco Tuesday seasoning.
Ingredients
- 4 corn on the cob husks removed.
- 1 tbsp oil
- 4 tablespoons sour cream
- 4 tablespoons whole egg mayo
- 1 heaped teaspoon of Taco Tuesday seasoning
- ½ lime juiced
- 150 g danish feta crumbled or grated on Microplane
- Small bunch of coriander chopped.
Instructions
- Coat the corn in oil and bbq on high heat for 15 minutes, turning occasionally (you want it black and gnarly, you can also do this in a frying pan)
- Meanwhile, combine the sour cream, mayo, taco seasoning and lime juice in a bowl and mix well.
- When the corn is ready, coat in the sour cream mixture. Top with feta and coriander. Add a little more lime if you like the zing.
