Prawn, Cherry Tomato and Spinach Pasta

Ingredients
- 12 large prawns peeled and deveined (400g)
- 4 Garlic cloves minced
- 2 tbsps Olive oil
- 250 g Cherry tomatoes halved
- 65 g Fresh spinach
- Spaghetti or your favourite pasta
- Lemon juice and zest
- Red pepper flakes optional
- Parmesan cheese grated
Instructions
- Cook pasta according to package instructions.
- In a pan, sauté prawns and minced garlic in olive oil until shrimp is cooked.
- Add halved cherry tomatoes to the pan and cook until softened.
- Toss in fresh spinach until wilted.
- Mix cooked pasta with the shrimp, tomatoes, and spinach.
- Drizzle with olive oil, lemon juice, and zest. Add red pepper flakes if desired.
- Top with grated Parmesan before serving.
