Ingredients

  • 12 large prawns peeled and deveined (400g)
  • 4 Garlic cloves minced
  • 2 tbsps Olive oil
  • 250 g Cherry tomatoes halved
  • 65 g Fresh spinach
  • Spaghetti or your favourite pasta
  • Lemon juice and zest
  • Red pepper flakes optional
  • Parmesan cheese grated

Instructions

  • Cook pasta according to package instructions.
  • In a pan, sauté prawns and minced garlic in olive oil until shrimp is cooked.
  • Add halved cherry tomatoes to the pan and cook until softened.
  • Toss in fresh spinach until wilted.
  • Mix cooked pasta with the shrimp, tomatoes, and spinach.
  • Drizzle with olive oil, lemon juice, and zest. Add red pepper flakes if desired.
  • Top with grated Parmesan before serving.
