Dahl is perhaps one of the most versatile dishes out there. You can jam-pack it full of whatever you like (yes, including veggies)! You can make it as soupy or as thick as you want it (just make sure the lentils are cooked 🤪), and you can serve it on just about anything… move over Sloppy Joe, Sloppy Dahl has just arrived.
Veggie Dahl
VEGGIE DAHL – this will change your life!
Servings: 4
Ingredients
- 1 tbsp vegtable oil
- 1 onion diced
- 4 garlic cloves finely chopped
- 1 tbsp ginger finely grated (use a microplane, if you don't have one, get one, it will change your life.
- 3 cups vegetable stock you can use water if you have no stock, but stock is better
- 1 cup coconut milk
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala
- 1 1/2 cups dry red lentils
To Serve
- Sour Cream or Yogurt
- A big hand ful of parsley or coriander grow your own herbs!
Instructions
- Rinse your lentils
- Heat oil in a pot over medium heat. Throw in the onion and cook for 3-4 minutes or until soft (don't burn them)
- Add garlic and ginger cooking for 1 minute
- Add in all the spices and mix. Add lentils and stock and bring to the boil.
- Once boiling, reduce to a simmer and simmer for 15 minutes
- After 15 minutes, add the coconut milk and cook for 5 minutes or until it thickens to the consistency you like (it can be s thick or as thing as you want, just make sure the lentils are cooked.
- Enjoy with rice, naan, roast spuds or all of the above… if you want.
